Say goodbye to boring chicken! 

I know, I know, claiming to have the BEST chicken marinade is a big claim.  And everyone will have their own opinion on what makes the perfect – the BEST if you will – marinade for chicken.  You might use Italian dressing.  Or go sweet with brown sugar or pineapple juice.  Maybe you kick up the heat with your favorite hot sauce.  

But I’m going super simple and using 3 ingredients that are in my fridge at all times.  And since we basically grill all Summer long, I’ve have given this easy marinade recipe a good workout, and it’s the winner at our house. 

Why I Love This Recipe

​Let me tell you, folks, this chicken marinade is an absolute game-changer! It’s perfect for those days when you’re short on time but still want to whip up something delicious for dinner. Plus, the flavor combination of tangy mojo marinade, savory soy sauce, and aromatic minced garlic is out of this world – trust me, you won’t be disappointed!

Ingredients

  • 1 cup Mojo marinade – find this in the Latin section of your grocery store
  • 4 cloves garlic, minced
  • 1/4 cup soy sauce
  • chicken (of course)

Step by Step

  1. Prepare the Marinade: In a bowl, combine the mojo marinade, minced garlic, and soy sauce. Mix well to ensure that all the flavors are evenly distributed.
  2. Marinate the Chicken: Place your chicken pieces in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, making sure it’s fully coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or ideally overnight, to allow the flavors to meld and penetrate the chicken.
  3. Cook to Perfection: When you’re ready to cook, remove the chicken from the marinade and discard any excess marinade. Grill, bake, or pan-sear the chicken until it’s cooked through and beautifully golden brown on the outside.
  4. Serve and Enjoy: Once the chicken is cooked to perfection, serve it up with your favorite sides and garnishes. Whether you’re enjoying it with rice, salad, or grilled veggies, one thing’s for sure – this chicken will steal the show!

Tips for Best Results

  • choose your favorite lemonade brand if using store-bought, I like Simply Lemonade or Minute Maid Light Lemonade or Crystal Light mix
  • experiment with the flavors, try strawberry lemonade, limeade, or other fruit juice in place of the lemonade, or use a different herbal tea mixed with lemonade
  • I like this drink sugar-free but for a sweeter iced tea add a little simple syrup, liquid cane sugar, granulated sugar, or even maple syrup to the mix according to your taste preference
  • If entertaining garnish the drink with a mint sprig or lemon wedge for a pretty presentation

Serving suggestions

This is a great versatile recipe that can be paired with so many sides. It’s also great to make a big batch for meal prep.

Serve on top of a salad (I love it with Caesar salad), in a sandwich wrap, enjoy in soft tacos, or serve with a veggie like grilled corn on the cob or elotes, sautéed green beans, calico beans, Italian broccoli, or roasted brussels sprouts.

Storage and Reheating

​If you happen to have any leftover marinated chicken (though I doubt there will be!), store it in an airtight container in the refrigerator for up to 2 days. When you’re ready to enjoy it, simply reheat it in the oven or microwave until warmed through. Trust me, it’s just as delicious the next day!

Ingredients

Scale
  • 46 boneless, skinless chicken breasts
  • 1 cup Mojo marinade
  • 2 tablespoons minced garlic
  • 2 tablespoons soy sauce

Instructions

  1. In a gallon sized zipper bag, add chicken and marinade ingredients.
  2. Allow chicken to marinade at least one hour but longer if time allows.
  3. Turn the chicken over in the bag several times during the time it is marinating.

To Grill Chicken

  1. Heat grill to medium heat.
  2. Place marinated chicken breasts on the grill.
  3. Grill about 12-15 minutes on each side or until chicken reaches 165 degrees Fahrenheit. Cooking time may vary depending on thickness of the chicken breasts and grill temperature.

  1. I’d love to try this recipe but I’m confused on the mojo marinade. What brand do you use? I just looked up mojo marinade @ my store and there’s several brands & several flavors , chipotle, criollo etc. I am not familiar with this particular product.
