I have never been a big sweets-for-breakfast kind of girl. Give me eggs over cereal any day. Almost every weekend morning I have my griddle out making bacon and eggs and hash browns for the family.
While I love our big breakfasts, there are times when I want something a little less work-intensive, like Christmas morning, or when we have busy sports schedules. For those days, this ultra-comforting Bacon Hash Brown Breakfast Casserole is the perfect recipe!

Ingredients
- a dozen eggs
- diced hash browns
- 1 pound of bacon
- yellow onion
- cheddar cheese
- milk
- salt and pepper
- green onion for topping if you like
Step by step
I love how easy this breakfast casserole is to make. After a quick assembly, just pop it in the oven and you’re done!
- Spread the hash browns along the bottom of a casserole dish coated with nonstick spray.
- Whisk the eggs and milk together, then add half of the cheese, onions, and bacon.
- Add salt and pepper and then pour over the hash browns.
- Top with the remaining bacon and cheese then bake for 45 minutes.
Slice the casserole into squares and serve with chopped green onion. Is your mouth watering yet?
This recipe is perfect for holidays, serving at brunch, or meal prep. Simply make it over the weekend, cut into squares, and refrigerate. Then you can reheat one each morning for a fast savory breakfast on the go!
Variations
- add chopped bell peppers and/or mushrooms
- add chorizo, a can of diced chilies, and serve topped with cilantro for a Tex Mex twist
- use diced ham or cooked ground sausage instead (or along with!) the bacon
- try different varieties of cheese: cheddar, Mexican blend, mozzarella, etc
- add in garlic powder to power up the flavor
- U\use shredded hash browns instead of diced

Ingredients
- 16 oz frozen diced hash browns
- 12 eggs
- 1/3 cup milk
- 2 cups sharp cheddar cheese, shreddedÂ
- 1 small yellow onion, diced
- 1 pound of bacon, cooked and chopped, divided
- salt and pepper
- green onion, optional
Instructions
- Preheat the over to 375 degrees Fahrenheit. Spray a 9 by 13 inch casserole dish with nonstick spray.
- Pour hash browns into casserole dish to cover the bottom.
- In a large bowl, whisk together eggs and milk.
- Add half of bacon, half of cheese, and chopped onion to egg mixture and stir to combine.
- Pour egg mixture over the hash browns and top with remaining bacon and cheese.
- Bake for 45 minutes or until the center is fully set.
- Cut into sqaures and serve warm, topped with chopped green onion if desired.

Hi, if we don’t cook the bacon it takes 45 min? Or is it 45 min with or without cooked bacon that it takes 45 min to make?
Made this for celebratory brunch. Easy & delish. Used the shredded hash browns. I did cook up some mushrooms and carmelized the onions to mix in. Yum!
