We survived the first week of school and 1000 forms to fill out. We made it through the first week of practice at two different times with two boys on two different football teams and on two different fields. We made it through another work week and we are working through a vehicle break down (BOO!).
In other words?
This momma is ready for a break! So, we are headed out to a local cabin on the river for two days and I have decided that easy meals are the only meals for me this weekend! And I am 100% putting this easy, no oven required meal on the menu ASAP!
Asian Turkey Lettuce Wraps with Sesame Ginger Slaw
One skillet and one bowl are pretty much all you need to whip up this filling, flavorful easy meal!
Now, you know how we roll with lettuce (and berries!) in this house, right? No bags or cartons from the grocery store! No more slimy, wilted lettuce or mushy, ruined berries after just a few days. Nope. Pop that produce in Rubbermaid® FreshWorks™ Produce Savers and call it a day! These romaine lettuce leaves are days old and they look just as great as when I bought them.
Now, can we talk about this Sesame Ginger Slaw? It is so SO good! Sounds fancy, but it couldn’t be easier to make when you use a bag of coleslaw mix, some fresh cilantro, that glorious ginger dressing (You know, the kind that is served on the salad in your favorite hibachi restaurant?) and a sprinkle of crunchy, nutty sesame seeds. Stir and serve. Seriously, this is my kind of side!
These Asian Turkey Lettuce Wraps are so easy to assemble – and I am all for easy. Once you set everything out, you can let your family load up the lettuce leaves and dinner is done!
Just grab a romaine lettuce leaf, add a scoop of that Asian inspired ground turkey (it is delicious warm and chilled from the fridge), a pile of the crisp slaw and a sprinkle of crunchy rice noodles. Fold up the sides of the lettuce leaf and dig in … taco Tuesday style with a little Asian twist!
With all of the canoeing, swimming and s’mores making we’ll be doing this weekend, these lettuce wraps are the perfect healthy meal to fuel our family!

Ingredients
Lettuce Wraps
- Romaine lettuce leaves
- Asian Turkey (see below)
- Sesame Ginger Slaw (see below)
- Crispy rice noodles
Asian Ground Turkey
- 1 pound ground turkey
- 1 teaspoon ground ginger
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 – 2 tablespoons low sodium soy sauce
Sesame Ginger Slaw
- One 16 oz. bag of coleslaw mix
- ⅓ cup chopped cilantro
- ½ cup ginger salad dressing
- 1 tablespoon sesame seeds
Instructions
Asian Ground Turkey
- In a large skillet, brown the ground turkey with the ginger, garlic powder and onion powder.
- When the turkey is cooked through and no pink remains in the meat, add the low sodium soy sauce and simmer for 1-2 minutes.
- Remove from heat.
Sesame Ginger Slaw
- In a bowl, stir together the coleslaw mix and cilantro.
- Pour dressing over slaw and stir to coat.
- Mix in sesame seeds.
- Refrigerate until you are ready to assemble the wraps.
To Assemble the Wraps:
- Spread about ⅓ cup ground turkey mixture in the middle of a romaine lettuce leaf.
- Top turkey with ¼ – ⅓ cup of the Sesame Ginger Slaw.
- Sprinkle with crispy rice noodles and enjoy!
