So, I am finally coming to terms with the fact that Summer is nearing an end and I will have two highschoolers in just a few short days. While we are busy buying shoes and back packs, supplies and clothes, I am also busy building my recipe repertoire with easy dinners that will keep us full and fed during the school year. This meal is one of our favorites – it comes together with just one skillet, a few items from our pantry and fridge and it packs big flavor!
Korean Turkey Rice Bowls
While that bowl of deliciousness may look frou frou and a little fancy, you can find all of the ingredients at your local grocery store! Since I was there scouting school supplies, I grabbed the ingredients from my local Walmart:
- Ground Turkey 85/15 – I like to use the 85/15 when I am replacing ground beef because it stays nice and tender and has a similar texture to ground beef
- Coleslaw mix – this is just pre-shredded cabbage and carrots. found in the produce section
- Microwaveable brown rice
- Crispy chow mein noodles – find them in the Asian section of the grocery store
- Limes – you will love the squeeze of citrus!
Guys, if you have never used ground turkey before, I really urge you to give it a try! We use it in sloppy joes, chili, meat sauce for pasta, tacos and any other recipe that calls for ground beef.
I based this recipe on a classic version of Korean Beef which is sliced or ground beef marinated or simmered in a slightly sweet and savory sauce with soy, ginger, sesame oil and garlic. I don’t always have fresh ginger or sesame oil on hand, so I adapted this to the spices and sauces I already had in my kitchen. To keep the dish lighter on calories, I substituted ground turkey for the ground beef and these Korean Turkey Rice Bowls were born!
Alright, now let’s head to the kitchen!
You can brown ground turkey just like ground beef, so break it apart in a skillet and add the garlic, ground ginger and onion powder. Once the turkey is cooked through, add the brown sugar and soy sauce and let it simmer to really soak up those flavors.
Once the turkey is cooked and the brown rice has been warmed, these Korean Turkey Rice Bowls are ready to assemble! Pile in rice, seasoned ground turkey, a handful of coleslaw mix, a sprinkle of crispy chow mein noodles and a lime wedge …
The warmth from the turkey and rice will soften the coleslaw mix and the bright citrus pop from the lime is a tangy counterpart to the sweet and savory sauce!

There you have it! A simple, no-fuss dinner with a handful of ingredients that is big on flavor. Here are a few ways that you can adjust the recipe for Korean Turkey Rice Bowls to fit your family’s preferences:
- Substitute cauliflower rice or quinoa for the brown rice
- Pile the ingredients into romaine or bibb lettuce leaves for tasty wraps
- Add additional veggies like thinly sliced red peppers, sauteed mushrooms or steamed broccoli
- Try crispy won ton strips instead of the chow mein noodles
- Add a little heat and sprinkle some red pepper flakes to the ground turkey while it is browning
- If you have it in your pantry, add a teaspoon of sesame oil to the ground turkey while it browns

Ingredients
- One pound Ground Turkey 85/15
- 1 teaspoon ground ginger
- 1/2 teaspoon onion powder
- 1 teaspoon minced garlic
- 1/4 cup brown sugar
- 1/4 cup low sodium soy sauce
- 16 oz. microwaveable brown rice
- Pre-shredded coleslaw mix (cabbage & carrots)
- Crispy chow mein noodles
- One lime (cut into wedges)
Instructions
- In a large skillet over medium heat, brown ground turkey with onion powder, ground ginger and garlic. (You can add a pinch of red pepper flakes and/or 1 teaspoon of sesame oil to the pan if using.)
- Once the turkey is browned, stir in brown sugar and soy sauce and allow turkey to simmer for a few minutes.
- Microwave brown rice according to package directions.
- Divide cooked rice between four bowls.
- Divide cooked turkey on top of the rice.
- Add a small handful of coleslaw mix, a sprinkle of chow mein noodles and a lime wedge to the bowls.
- Squeeze the lime over the rice bowl and stir to combine.
- Enjoy!
