Why I love this recipe

I love wraps (or roll ups) as an alternative to sandwiches for a couple of reasons:

  • They can usually be made ahead of time and tucked in the fridge or on ice in a cooler
  • Wraps are served cold and no one has to stand over a hot grill in the summer
  • There are SO many combinations of spreads, veggies, meats and cheeses that you can find a wrap for even the pickiest of eaters

In the past weeks, I’ve been sharing some of our family favorite recipes made with mustard … remember these Grilled Honey Mustard Drumsticks and Roasted Vegetables with Garlic Dijon Sauce?

The simple addition of Spicy Brown mustard gave a HUGE flavor boost to the otherwise traditional flavors of roast beef + provolone in these wraps. I added it to a spicy cream cheese spread but you could also substitute mayo or your favorite soft spreadable cheese.

Ingredients

  • large (burrito sized) Spinach & Herb tortillas – feel free to use regular flour tortillas
  • quality deli thin slices of roast beef
  • non-smoked Provolone cheese
  • lettuce leaves
  • cream cheese
  • spicy brown mustard

Step by step

  1. Combine 2 tablespoons of spicy brown mustard with 1/3 cup whipped cream cheese. Refrigerate until ready to use.
  2. Spread each tortilla with a generous layer of cream cheese spread.
  3. Layer on the meat, add a sprinkle of salt & black pepper, cheese and lettuce.
  4. Roll each wrap up tightly in plastic wrap if you are prepping these Spicy Roast Beef Wraps ahead of time. Otherwise, cut each wrap in half and secure each half with a toothpick and pile them on a tray or cake stand 🙂

Tips for best results

  • roll ups can be tricky to roll nicely, the trick is to add your cheese and meat/toppings on one side of the tortilla only, then starting on the side with the fillings roll tightly
  • if you plan on slicing the wraps, make ahead of time and refrigerate at least one hour to allow the cream cheese to firm up and better hold the wrap together
  • slice with a serrated bread knife for the best results

Variations & add-ins

  • add red onion slices, avocado, or lettuce
  • use sharp cheddar cheese, swiss cheese, or pepper jack cheese
  • use regular or dijon mustard to lessen the spice
  • use regular or whole wheat wraps
  • use horseradish or blue cheese dressing to change up the flavor

Since these can be made ahead, they are perfect to prepare the day before a pool party or get together. Serve with individual cups of potato chips, pasta salad or fruit salad to make entertaining a breeze!
