With a handful of healthy ingredients and about 15 minutes, you can enjoy this hearty warm Roasted Asparagus Salad with Walnuts & Asiago! I am getting the new year (and a new budget) off to a healthy start thanks to this post created in partnership with ALDI.
I do it every year. Make resolutions that I have all intentions of keeping but rarely do for long: no carbs, eat healthier, exercise more, drink more water, be more patient. So this year, I figured I would set myself up to actually make a resolution I can keep: save money wherever it is reasonable and possible. With one teenager just a little over a year away from college, the other almost driving, both playing all the sports (seriously, this mom and her washing machine just can’t catch a break, ha ha) and a starving savings account, I’ve got to save anywhere and everywhere.
Like I mentioned before, I’m taking the first step by picking up lots of house hold groceries at our local ALDI. And oh okay. Maybe I’m still trying to hang onto that ‘eat healthier’ resolution, too. But with this salad? Let’s just say this is a two birds with one stone kind of recipe!
Roasted Asparagus Salad with Walnuts & Asiago
I know it looks fancy, but this Roasted Asparagus Salad is easy and delicious! All it takes is a few good quality ingredients from ALDI and a few minutes in the kitchen. Speaking of ingredients, there are only 6 of them: baby artisan lettuce, fresh asparagus, golden raisins, Asiago cheese, walnuts and a good garlicky vinaigrette.
As part of ALDI‘s Taste & Tell challenge, I picked up the same ingredients at my chain grocery store. It was no surprise that I saved by shopping at ALDI. What was surprising? I saved over 30%!!
ALDI keeps their prices down by going back to basics. That means their stores are only open during peak shopping hours, they shelve products right in their display boxes to make restocking easier and they don’t offer non-essential services like check cashing or pharmacies.
If I save even $25 on our weekly grocery bill for a family of 4 (with 2 teenagers who will eat anything that isn’t nailed down), I would save over $1300 a year! Just from making one quick weekly trip to ALDI.

And naturally all of the yummy ingredients to make this Roasted Asparagus Salad with Walnuts & Asiago. Even Chris had me pack this salad for his lunch box. You know it’s a winner when the hubby wants the leftovers 😉
The first step to this salad is roasting that beautiful fresh asparagus. After the woody stems are removed, cut the asparagus into two inch pieces and put them on a baking sheet. (If you can’t find asparagus, use broccoli, carrots, mushrooms or potatoes. Trust me – all delicious on top of salads!)
To keep calories down, I mist the asparagus with non-stick cooking spray instead of drizzling it with oil.
While the asparagus is roasting, toast the walnuts and shave the Asiago cheese. Another quick tip? Use a vegetable peeler to shave thin slices of this nutty fragrant cheese. YUM!
Once the asparagus is roasted, toss it in the garlic vinaigrette and assemble the salad. This is another of my calorie saving tricks! Instead of dressing the lettuce (which usually leads to soggy, over dressed greens), dress the roasted veggies. When the veggies are warm, they really hold onto the dressing so every bite still has plenty of flavor!
Roasted Asparagus Salad with Walnuts & Asiago
- T&A Artisan baby lettuce
- One pound Southern SELECTS fresh asparagus
- 1/2 cup Southern Gold California golden raisins
- 1/4 cup Specially Selected Garlic Vinaigrette
- 1/2 cup SimplyNature Organic walnuts
- A wedge of Priano Asiago Cheese
Preheat oven to 375 degrees F.
Spritz a baking sheet with non-stick cooking spray.
Prepare asparagus by removing woody stems and cutting into 2 inch long pieces.
Spread asparagus on the baking sheet, mist with additional cooking spray and sprinkle with salt and pepper.
Roast asparagus for about 10 minutes.
While the asparagus is roasting, rinse and dry lettuce.
Cut or rip it into bite sized pieces and fill two salad bowls or plates. Set aside in the refrigerator.
In a medium skillet over medium heat, toast walnuts until they are lightly browned and you can smell the toasted nut fragrance, stirring frequently.
Once asparagus is done, toss it in the vinaigrette and pile it on the salads.
Top with golden raisins and toasted walnuts.
Finally, use a vegetable peeler to shave pieces of Asiago cheese onto each salad.
Devour, enjoy and repeat!
