Sweet potato casserole or candied yams? Whatever you call it this marshmallow-topped sweet potato casserole was my absolute favorite dessert growing up! I would look forward to indulging every Thanksgiving.
This year, I decided to put a twist on the classic flavors of sweet potato casserole with this easy bite-sized variation. Like our Sweet Potato Dump Cake, these easy sweet potato bites would be the perfect addition to your favorite Thanksgiving side dishes or tasty appetizers.
Sweet potato rounds are roasted, then topped with butter, brown sugar, pecans, and mini marshmallows – it’s the best of sweet potato casserole in a few delectable bites. No longer just a lumpy bumpy side dish … these sweet potato casserole bites will absolutely steal the show!
Ingredients
The best part is that there are only 5 basic ingredients!
- mini marshmallows
- sweet potatoes
- brown sugar
- chopped pecans
- butter

Step by step
- It gets started with 4 large sweet potatoes, peeled and sliced into rounds with a sharp knife. Place them in a single layer on a baking sheet, I was able to get about 15, half-inch thick rounds per large baking sheet.
- Coat the sweet potato slices lightly with olive oil and roast ten minutes or until fork tender.
- While the potatoes bake, melt the butter in the microwave. Combine the melted butter with the brown sugar and pecans in a medium bowl.
- Top each sweet potato slice with a generous spoonful of butter, brown sugar, and pecans.
- Add mini marshmallows on top and return to the oven until the marshmallows are golden brown and begin to melt.
Soft, sweet mini marshmallows bake up puffy and pillowy and then melt into a sticky puddle covering that brown sugar and pecan goodness…
Serving suggestions
These are a great Thanksgiving appetizer or side dish but they are so easy you can easily make them any time of year.
Serve these sweet potato bites with oven-roasted turkey breast and twice-baked potato cups for a Thanksgiving-themed dinner year round!

Ingredients
- 4 large sweet potatoes (about 3 1/2 pounds)
- olive oil
- 1 cup light brown sugar
- 1 cup chopped pecans
- 1/4 cup (1/2 stick) unsalted butter
- mini marshmallows
Instructions
- Preheat oven to 375 degrees F.
- Spray two baking sheets with non-stick cooking spray.
- Peel sweet potatoes and slice into 1/2 inch rounds.
- Place sweet potato rounds on baking sheet, drizzle lightly with olive oil and roast until the rounds are fork tender but not TOO soft. Mine took about 10 minutes.
- While potatoes are roasting, melt butter in a microwave safe bowl.
- Stir together butter, brown sugar and pecans.
- Divide brown sugar pecan mixture over the tops of the roasted potato rounds.
- Add 5 or 6 mini marshmallows on top of the brown sugar pecan mixture.
- Return pan to the oven until marshmallows are melted.

I started shopping at Aldi a few months ago and love saving money on their products. Not only are the items cheaper but most of them are healthier than regular name brands.
