Yep – it’s another dip. I just can’t quit them. But this 3-ingredient Lemon Blueberry Cheesecake Dip was so good I just couldn’t wait any longer to share it with you!
I mean, when you can be dipping thin crispety crunchety ginger cookies in a beautiful bowl of the lightest lavender, lemon blueberry, creamy, dreamy cheesecake-ish dip in literally a few minutes, why not?! {And honestly, how many made up adjectives can I cram in one sentence, ha ha?}
Anyhow, this dip.
Lemon Blueberry Cheesecake Dip
There are just 3 little ingredients …
Three!
- Marshmallow fluff for the sweetness and fluffiness
- Blueberry cream cheese for the tang and body in the dip
- Lemon essential oil
Why lemon essential oil? Because when it comes to lemons and limes, I always have the best intentions of using them. But they end up forgotten, tough and dry in my crisper drawer. Every. single. time. So the day I made this dip, the lemon I scrounged up was sad and shriveled. Into the garbage disposal it went. Just one more reason I was so glad that I had a Young Living Lemon Essential Oil in my stash!
I’ve used lemon essential oil in the glaze for these easy Cherry Pie Dumplings and the Healthier Iced Lemon Pound Cake from One Project Closer. I add it to hot tea and in any recipe when I need a quick punch of lemon flavor!
Make sure that any essential oil that is being added to a recipe and will be ingested is 100% pure therapeutic grade and not just for fragrance. You can find more info about Young Living Essential Oils here.
I only had to add 2 or 3 drops for a bright lemon flavor in this sweet blueberry dip – YUM!
Once I stirred together the marshmallow fluff, cream cheese and lemon essential oil, I plopped it in a little bowl and served it with thin, crispy ginger cookies. Oh.My.Word. Seriously, grab some ginger snaps or ginger cookies – the spiced cookie is sooooo delicious with this sweet creamy dip. I bet cinnamon graham crackers, fruit or vanilla wafers would be delicious, too.
