Don’t tell the turkey, but stuffing is my favorite part of Thanksgiving! I mean, carbs are my kryptonite anyway. So when you add spices and sauteed veggies to sourdough bread cubes and bake it until it gets all golden, I am in heaven! And while I will eat leftover stuffing for days, I realize that everyone may not share my affinity with leftover stuffing. Now, if you want an easy way to makeover that stuffing into baked cheesy stuffing muffins with just the right amount of crispy edges and golden brown tops, then you are in luck today!!

You know that if there is a recipe posted here at Shaken Together, it is going to be easy. So, all you need for this Thanksgiving leftover makeover is stuffing, eggs, cheese and melted butter.  Sounds delicious already, right?! The eggs and cheese are the binders to hold that leftover stuffing together and add a little moisture – especially if your stuffing has been neglected behind the leftover pumpkin pie. Oh right, what leftover pie? 😉

My favorite part are the crispy edges (especially if the cheddar cheese got all baked and browned!) and the golden brown tops, so the last few minutes under the broiler really give these cheesy stuffing muffins great texture while leaving the stuffing inside soft and tender!

Cheesy Stuffing Muffins {Thanksgiving Leftovers Recipe}

Ingredients

  • 3 cups prepared stuffing
  • 2 beaten eggs
  • 1/2 cup sharp cheddar cheese
  • 1 tablespoon melted butter

Instructions

  1. Preheat oven to 375*.
  2. Place 9 or 10 foil baking cups into a muffin tin.
  3. In a mixing bowl, mix the stuffing, eggs and cheese together and stir until well combined.
  4. Divide the mixture between the baking cups and lightly press it down so the stuffing mixture sticks together.
  5. Brush the tops of the stuffing muffins with melted butter.
  6. Bake for 15-18 minutes.
  7. For a little extra crispy edges and a golden brown top, broil the stuffing mufffins on High for about 2 minutes. Watch them closely so they do not burn.
  8. Serve with extra butter or leftover cranberry sauce.

Since these stuffing muffins {or ‘stuffins’ as I have heard them called} are super savory, serve them with a dollop of leftover cranberry sauce to add a little tang and brightness from the fruit. You might just decide that these guys needs a permanent spot in your after Thanksgiving leftover menus!

  1. Oh yeah baby! Just made these. My stuffing was on the dry side, so I added a quarter cup of milk to beaten eggs. Also substituted co jack cheese for cheddar and served a sample half muffin with butter to Mr Rat and I. LUV it! And serving with leftover ham and veggies for dinner :p
