Well, how about that?  I missed Chocolate Mint Day {oh, it’s a thing} by 24 stinkin’ hours.  But you know what?  It’s Friday and I’m just going to pretend that it is still Chocolate Mint day and we’re going to celebrate anyway!  Because chocolate?  And mint?  A tasty match made in heaven!  I mean, the Girl Scouts have Thin Mints on lock down, those Andes mints are melt-in-your-mouth fantastic and mint chocolate chip ice cream is pretty much one of the seven wonders of the modern world.  So I am all for celebrating this delicious combo for two days!  With cookies.  No bake cookies!  With easy delicious mint chocolate no bake cookies!

I really just can’t stop with the no bake cookies.  And I hope you’re okay with that.  Because as of today, there are pumpkin spicebanana bread, birthday cake, oatmeal scotchies and now a mint chocolate version of these easy no bake cookies!  Shoot, I’ve got a whole Pinterest board for no bake sweet stuff!

Okay, back to today’s cookies …

Since I had my iPhone handy, I snapped a few pictures of the process from ingredients to cookies in less than 10 minutes!

I love that this recipe makes a pretty big batch of two-bite cookies!  I sent some with Chris to work, some to Cam’s baseball team to chow down on in the dugout and some to a friend … plus there were still plenty to nibble on at home.  You know, for scientific taste testing purposes 😉

Description

These Mint Chocolate No Bake Cookies are cooked stove top and dropped on parchment into soft delicious two bites cookies full of mint chocolate goodness!


Ingredients

Scale
  • 2 cups granulated sugar
  • 3/4 cup unsalted butter
  • 2/3 cup milk
  • 1 small box (3.4 oz chocolate instant pudding mix)
  • 1/2 teaspoon vanilla extract
  • 1 drop Young Living peppermint essential oil (or 1/4 teaspoon mint extract)
  • 1 cup chocolate & mint chips
  • 3 1/2 cups quick cook oats

Instructions

  1. In a large pot, bring sugar, butter and milk to a boil.
  2. Allow to boil for 2 minutes, stirring constantly.
  3. Remove the pot from the heat and stir in pudding mix until thoroughly combined.
  4. Stir in vanilla extract, peppermint essential oil and oats.
  5. Allow mixture to cool for 2 minutes then stir in chocolate & mint chips.
  6. Allow to set for an additional 2 minutes.
  7. Spoon cookies onto a parchment lined tray and allow cookies to set.

Notes

I use my small Pampered Chef cookie scoop to scoop out the cookies, so you may get more or less cookies depending on the size you make them. You can also used mint filled morsels or Andes chips (found in the baking aisle at Walmart, Target and some grocery stores) if you can’t find the mix of chocolate/mint chips.
