Whole Wheat Pita Caprese Snacks & Student Chef Cook-Off

Kaleb knows the difference between blanch and boil, Camden is currently taking Culinary Principles as a high school elective and both boys love to help me in the kitchen. Which makes my foodie heart skip a beat! Last weekend, as our entry for the 2014 “Fresh for Florida Kids” Student Chef Cook-Off, Kaleb and I put our heads to come up with a healthy snack for kids!

Whole wheat pita caprese snacks - an easy healthy snack for kids!


I absolutely LOVE when my two favorite sous chefs hang out in the kitchen with me and in fact, Kaleb helps out with dinner almost every single night. My boys are learning how to cook {you’re welcome, future wives}, appreciate fresh ingredients, experiment with herbs and spices … they are so much more willing to try a new dish if they helped to prepare it! Kaleb was SO excited to create and prepare this recipe for a healthy snack! From baking the pitas to slicing the tomatoes, he helped every step of the way. He even picked the fresh basil from our two-tier pizza garden planter! Whole Wheat Pita Caprese Snacks - a healthy snack for kids created and cooked by a kid!

Whole Wheat Pita Caprese Snacks

Ingredients

  • 4 – 4 inch whole wheat pitas
  • 4 – 1/2 inch thick slices of fresh mozzarella cheese
  • 4 ripe roma tomatoes
  • Fresh Basil
  • Balsamic Vinegar

Instructions

  • Preheat oven to 350*.
  • Prepare a baking sheet with non-stick cooking spray and place pitas on baking sheet.
  • Put baking sheet in the preheated oven.
  • While the pitas are baking, slice the tomatoes and cut the basil into small, thin strips
  • Bake the pitas for 3-5 minutes until they are warm and crispy.
  • Allow the pitas to cool for a few minutes.
  • Then, top each pita with one slice of mozzarella cheese and tomatoes slices.
  • Drizzle about 1/2 teaspoon balsamic vinegar over each pita and sprinkle with fresh basil.

We loved every bite of these whole wheat pita caprese snacks! The pita is crispy on the outside, the cheese is soft and creamy, the tomatoes are a fresh and bright addition and the tangy balsamic vinegar adds flavor without adding salt! Here are all the details about how to enter, the fabulous prizes and the dates/locations!!

Entry

Create an original snack recipe. Only original recipes will be accepted. Do not use brand names of ingredients. Recipes must meet the following criteria:

  • Contains at least one fresh fruit or fresh vegetable
  • Has clear directions and makes 4 snack servings
  • Can be prepared in 45 minutes or less
  • Is creative and original in nature
  • Has readily-available ingredients (those that can be purchased at a typical supermarket)
  • Is an original snack recipe that promotes good nutrition/health
  • Entries must be submitted with a photo of a completed serving
  • Limit one entry per region per person
  • The recipe entry must be created solely by a child in 4th–12th grade living in the state of Florida during the 2014–2015 school year

Prizes

  • Three FIRST PLACE winners (one from each grade category) at each Cook-Off will win a certificate for a Publix Aprons Cooking School class and a $100 gift card to Sports Authority!
  • Three SECOND PLACE winners (one from each grade category) at each Cook-Off will win a certificate for a Publix Aprons Cooking School class and a $75 gift card to Sports Authority!
  • Three THIRD PLACE winners (one from each grade category) at each Cook-Off will win a certificate for a Publix Aprons Cooking School class and a $50 gift card to Sports Authority!
  • All regional cook-off contestants will receive a $50 gift card to help cover their food and transportation costs.
