Everything Bagel Overnight Breakfast Casserole with bagels, bacon, eggs, and plenty of cheddar cheese is the perfect way to feed a crowd & easy to prep the night before! Breakfast is the most important meal of the day.  And I think it deserves so much more than cereal tossed in a bowl and drenched in milk. But who is going to haul out the skillets, toaster, baking sheets and 20 ingredients before the first cup of coffee has kicked in on a school day?

Not even this early riser!

But I will prep this ridiculously delicious breakfast casserole the night before and pull off a gold medal breakfast!

Ingredients

  • eggs
  • everything bagels
  • milk
  • bacon
  • cheddar cheese
  • ground mustard
  • Worcestershire sauce
  • salt and pepper

Step by step

  1. Preheat oven to 350 degrees and spray a casserole dish with nonstick spray.
  2. Whisk together eggs, milk, ground mustard, Worcestershire sauce, salt and pepper.
  3. Spread chopped bagels across the bottom of baking dish.
  4. Sprinkle bacon pieces over the bagel pieces.
  5. Pour egg mixture over bagels and bacon.
  1. Sprinkle on cheese.
  2. If preparing the night before, cover the dish and refrigerate. If preparing the same day, allow egg mixture to mostly absorb into the bagel pieces (about 2 hours).
  3. Bake for about 40 minutes. The eggs should be cooked through and the cheese melted.

Yes! You can make this overnight breakfast casserole the day before you are going to wow your family and friends.  

Do I have to make the casserole the night before?

No, the casserole can be assembled and cooked the same day, however you need to let the bagel pieces absorb the egg mixture for at least 2 hours before baking.

How do I store leftovers?

Store leftover casserole in an airtight container in the refrigerator up to 3 days.

Can you freeze overnight breakfast casserole?

You can freeze this casserole after baking. Allow to cool then wrap tightly and store in the freezer up to 3 months. Thaw overnight in the refrigerator and reheat in an oven at 350 degrees until heated through.

Variations

The best thing about casseroles – even breakfast casseroles – is that you can tweak them to fit whatever you might have in your pantry and fridge!

  • Use asiago cheese bagels instead of everything bagels.
  • Switch up the type of shredded cheese.
  • Use browned breakfast sausage or cubed ham instead of bacon
  • Replace the bacon with sautéed mushrooms, onions and peppers for a vegetarian version.
  • Add some hot sauce and pepper jack cheese for a little heat.

Everything bagels are the stars in this Easy, Cheesy Everything Bagel Overnight Breakfast Casserole!


Ingredients

Scale
  • 4 Everything Bagels (chopped into bite sized pieces)
  • 9 slices bacon (cooked crisp and chopped)
  • 6 whole eggs
  • 2 cups milk
  • 1 1/2 cups shredded sharp cheddar cheese (or your favorite cheese)
  • 1 teaspoon ground mustard
  • 1/2 teaspoon Worcestershire sauce
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Prepare a 9×13 baking dish with non-stick cooking spray.
  3. Whisk together eggs, milk, ground mustard, Worcestershire sauce, salt and pepper.
  4. Spread chopped bagels across the bottom of baking dish.
  5. Sprinkle bacon pieces over the bagel pieces.
  6. Pour egg mixture over bagels and bacon.

Thank you for making this recipe – I was looking for something bagel specific, preferably *everything* bagel specific in a breakfast casserole as my boyfriend is in a Breakfast Club at work and wanted to use something that highlights the Jersey traditional “Bagel, pork roll (Taylor Ham) egg and cheese sandwich to those that have never had that Jersey delicacy. I just put it in the fridge to soak overnight, and I’m sure this will be a hit. If not at his work, it will definitely will be a winner in this home so far from Jersey. I only wish I had some extra ‘everything spice’ but I ordered some online for next time and mix it in with the eggs or sprinkle on top with the cheese. There will be a next time!

    1. Hi Pam – I haven’t, but that would be delicious. They would probably release a little moisture while cooking, so you could either saute the vegetables before adding them to the casserole or reduce the milk in the egg mixture. I’d love to hear back if you try it!!

    I’m not in the USA, just wondering what ‘everything bagels’ are? And I’m guessing I can substitute regular bagels, plus a bit of extra spice/herbs? Thanks!

    1. Hi Bec! Everything bagels are bagels that are baked with poppy seeds, sesame seeds, dried onions, salt and dried garlic. You can definitely substitute onion bagels or just plan bagels and add your favorite spices. It’s a pretty easy recipe to adjust to your personal tastes or what you have on hand!
