Well, it’s coming. It happens every year. Right on the heels of back to school and my birthday. The start of the pro football season. Now, I really can’t complain because an entire weekend day of football means that I can craft and bake and blog to my heart’s content without anyone feeling slighted. As long as I provide a “football feast” as it is known in our house, my three guys are happy to cheer the day away. This season, I have a cool creamy pesto gorgonzola dip to add to our favorite line up of tangy crock pot lil smokies, creamy pizza dip and apple jelly meatballs!
I know it’s green and maybe not the prettiest appetizer dip you ever did see. And while the combination of pesto and Gorgonzola cheese crumbles may sound a little out there, once you stir three little ingredients together and let them hang out in the fridge for a bit, you will not be able to stop dipping!!
I haven’t tried it yet, but I imagine that if you slathered this creamy pesto Gorgonzola dip on a fresh loaf of French bread and popped it under the broiler for a few minutes, you would have another spectacular appetizer! That would be a pretty great addition to an Italian pasta dish or a hearty Summer salad!
This recipe for creamy pesto Gorgonzola dip can easily be doubled or tripled for a crowd. And since you can make it ahead of time, it is an appetizer that you can prep the day before any party or get together – I actually think it tastes better when the pesto and Gorgonzola get a little time to get to know each other 😉
