No-Bake Back to School Cookie Bark

My boys head back to school in two weeks.  How is it even possible that our Summer is nearly over?  We took an amazing family vacation and even spent last weekend at the beach.  But there is definitely a part of me that is not quite ready for homework and projects and parent-teacher conferences.  Perhaps we have a wee case of the back to school blues?

{Or in my case, a little touch of How in the world do I have a middle schooler and high schooler, where has the time gone, stop growing already, they will be college, like, tomorrow?!}  Okay, getting a grip … ;)

If you are like us and may need a few smiles for that first day, grab your sprinkles and make some quick and easy back to school cookie bark!

Beat the back to school blues with quick and easy back to school cookie bark!

Who wouldn’t love their name spelled in awesome chocolate alphabet cookies, pressed into smooth white vanilla chocolate and then doused in bright, colorful sprinkles?!  You may not want your name in lights, but you most certainly want your name in cookies!!

Back to school cookie bark would be so fun to sneak into a lunch box or have waiting after that first day of school!  Bonus:  it is done is minutes!

Since there is not really a recipe, I thought I would have a little fun with the instructions for this super simple treat!

That’s it!  Easy, right?  If you really want to amp up the fun factor after the first day or first week back to school, have everything waiting when your kiddos get home and let them go to town spelling their names and chowing down on Back to School Cookie Bark!

P.S. I found these alphabet cookies in a big ol’ tub at Target for $5 or $6.  There are numbers included, too, so just think of all the tasty potential for math and reading activities!
