Double Chocolate Cookies and Cream S’mores

Double chocolate cookies and cream s'mores - YUM!!

So, our family is taking our first big family vacation in a few weeks.  Just the four of us.  In a gorgeous cabin in the mountains of North Georgia – Eeeeeee!!  Naturally, I am in charge of meals.  And since there is a fire pit right off of the wrap around deck, s’mores were a no-brainer.  But I can’t make regular ol’ s’mores {not that there is anything wrong with them}!  Nope, I did a pre-vacation trial run for decadent double chocolate cookies and cream s’mores!

Have you seen the chocolate brownie marshmallows?  When I stumbled across them at Target, the wheels started turning …

If the marshmallows are already chocolate,

Then the chocolate doesn’t need to be chocolate.

No! It should be … cookies and cream!

And honey graham crackers aren’t going to work.

Nope! Those should be deep, dark chocolate, too!

{That really is pretty much how the recipe development part of my brain works.  Chris says it is a scary, scary place, ha ha!} But we’re pretty fond of the results:

Now, toasted marshmallows around a fire are the best for s’mores in my book.  BUT on this particular day, I broiled my s’mores in the oven. Why?  Well, what if there is:

  • A s’mores emergency and need you s’mores STAT?  {What? It could happen.}
  • A rainy days with cooped up kids … what is better than surprise double chocolate cookies and cream s’mores?!
  • A day when you want to make s’mores and it is 1000* outside and way too hot for a mid-day fire in June in Florida?  Ahhh yes, that one sounds familiar!

Any which way you make them, long as your chocolate bars get melty and your marshmallows soft and gooey, you’ve got s’mores!

Double Chocolate Cookies and Cream S’mores


  • Honey Maid Chocolate graham crackers - one per s'more
  • Kraft Jet-Puffed Mallow Bites in Chocolate Brownie - one per s'more
  • Hershey's mini Cookies'n'Cream bars - one per s'more


    In the oven:
  1. Line a sheet tray with parchment and break each graham cracker in half.
  2. On one half of the graham cracker, place a chocolate brownie marshmallow.
  3. On the other half of the graham cracker, place two pieces of the candy bar.
  4. Broil on low - watch them closely - until the candy bar starts to get glossy and shiny and the marshmallows start to puff slightly.
  5. Smoosh one of each graham cracker together (one marshmallow, one candy bar) and gently press together.
  6. Around the fire:
  7. Prepare a tray with halved graham crackers and candy bars.
  8. Place a marshmallow on a roasting stick and roast it over the flame until toasted and melty.
  9. Carefully, smoosh the melty marshmallow on top of a graham cracker, cover it with two candy bar pieces and the other graham cracker.
  10. Gently press together and then chow down!

Funny story about this recipe:  When I was making these, the cable guy was here to install a new modem and another cable line.  After any photography session, my boys are usually my “clean up creaw” – terrible chore, they really hate it ;)  But it was the cable guy’s lucky day … he was more than happy to take two of these off my hands.  AND take a picture on his cell phone to send to his wife!!

    Since we stopped going camping we haven’t had s’mores, my but yours looks absolutely scrumptious. I could just eat the chocolate grahams and choc marshmallows if our Target has them. Will have to look for them very soon.
    How fun to vacation in mtns in a cabin, love that idea. Hope you’ll have fantastic weather the whole time you’re there. Are you doing fun things today ?
