Quick Pesto Parmesan Chicken Salad & a Surprise Baby Shower!

I love babies.  Sweet squishy faces, teeny tiny toes, the delicate baby powder scent, those little noises.  My good friend Katie and her husband Jon join will be welcoming their own little baby boy in the next few weeks!  Katie and Jon are the DIY duo over at Sew Woodsy and Katie shares delicious recipes at Katie’s Cucina.  And today, I am joining an amazing group of bloggers to celebrate the  beautiful addition to their family and throw Katie a surprise baby shower!

Since the new parents will be working on less sleep and living in the happy haze of a newborn, I put together an easy but simply delicious quick pesto Parmesan chicken salad!

Super delicious pesto Parmesan chicken salad

This chicken salad makes a fantastic sandwich!  It would be wonderful over fresh, crisp greens with just the barest drizzle of olive oil and a squeeze of lemon.  Grab a dozen of mini croissants and crackers and this easy chicken salad is the perfect addition to your brunch menu.  Since there are 4 cups of roasted chicken, diced red peppers and fresh grated Parmesan cheese, this pesto Parmesan chicken salad is definitely hearty enough for dinner!

This chicken salad is awesome! Full of pesto, Parmesan cheese and fresh red pepers!

Quick Pesto Parmesan Chicken Salad


  • 4 cups shredded/chopped cooked rotisserie chicken
  • 4 tablespoons prepared basil pesto
  • 4 tablespoons mayo with olive oil
  • 1/3 cup diced red bell pepper
  • 1/3 cup fresh grated Parmesan cheese
  • Salt and pepper to taste


  1. Stir together mayo and pesto.
  2. Put chicken, peppers and cheese into a bowl and sprinkle with salt and pepper to taste.
  3. Mix in mayo/pesto until the chicken mixture is coated.
  4. Refrigerate for at least 1/2 hour to allow flavors to combine.
  5. Serve over mixed greens with a drizzle of olive oil and lemon juice, on fresh soft Italian bread for sandwiches or with croissants and crackers.

Now, in our house, we don’t like our macaroni, potato or chicken salad “saucy”, so feel free to add additional mayo or pesto.  I mean, in my book, more pesto is never a bad thing!
