Southwestern Quinoa Bowl – Easy, Healthy & Delicious!

I know that there are a ton of you that are bogged down in the winter blahs.  Snow, sleet and extreme cold are one thing that my fellow Floridians and I do not have too much experience with.  {Don’t worry – Mother Nature gave us hurricane season!}  So, if you need a warm, hearty and healthy meal to beat those blues, I have just the recipe to bring a little Florida sunshine your way!

Believe it or not, even though we are in the dead of winter, our little peninsula is cranking out tons of gorgeous seasonal produce:  avocados, broccoli, cabbage, carrots, cauliflower, celery, corn, cucumbers, eggplant, grapefruit, mushrooms, okra, onions, oranges, potatoes, squash, strawberries and tomatoes!

This recipe combines quinoa (a protein packed grain), black beans, fresh Florida sweet corn, avocados and tomatoes with a kick of flavor from Southwestern spices that is SO satisfying!

Quinoa is such a versatile grain and I find it more satisfying than rice with a subtle nutty flavor. It absorbs the flavorful sauce from the black beans and lime juice and is not dry at all!  Rich Southwestern spices give the pan roasted sweet corn a little kick.  The tomatoes and avocado are cool and fresh and add the perfect touch of brightness to the dish!

Southwestern Quinoa Bowl – Easy, Healthy & Delicious!

Yield: 4 hearty servings

Ingredients

  • 1 cup quinoa
  • 2 cups fresh sweet corn kernels (from 3-4 ears)
  • 1 tablespoon olive oil
  • 1/2 teaspoon minced garlic
  • 1 teaspoon Southwest spice blend
  • 1 can seasoned black beans, undrained
  • 1 cup ripe tomatoes, cubed
  • 1 cup ripe avocado, cubed
  • 1 lime, cut into wedges
  • Optional garnishes: cilantro, crispy tortilla strips

Instructions

  1. Prepare quinoa according to package directions.
  2. While the quinoa is cooking, add the corn, garlic, olive oil and Southwest spice to a large skillet over medium heat.
  3. Pan roast the corn until some of the kernels turn a toasty golden brown.
  4. In a large serving bowl (or 4 individual bowls) layer quinoa, black beans and pan roasted corn.
  5. Top with tomatoes and avocado.
  6. Serve with lime wedges and garnish with cilantro and crispy tortilla strips if desired.

I made this Southwestern quinoa bowl for my Mom while I was visiting at her house over the weekend.  She ate it for lunch and dinner the following day!  I came home and made a second batch so I could take it for my lunch all week.  It is safe to say that we are enjoying every last bite of our fresh Florida produce!
