No-Bake Halloween Cookies

Just look at that cute little “face”!  Those funny googly eyes just make these no-bake cookies fun to make and even more fun to eat! The best part is how easy these are to make!  They only require 4 ingredients + eyes!

Wouldn’t these be such a funny surprise to put in your kiddos’ lunch box?

Even though we put the eyes on the same way on each cookie, I love how some are a little cross-eyed, some look silly and some look like they want to eat you for a mid-day snack!

Tips for No Bake Cookies for Halloween

  • Have all your ingredients on hand and candy eyes handy, the recipe whips up quickly and you need to add the eyes before the cookies set
  • If your cookies don’t set right away, place in the refrigerator to speed the process.
  • Use crunchy peanut butter for more texture

Description

Messy monster cookies are guaranteed to be the cutest no-bake Halloween cookies at every Halloween Party! With just 5 ingredients and 10 minutes, you can have these fun Halloween treats ready in a flash!


Ingredients

Scale
  • 6 ounces butterscotch chips
  • 1/2 cup peanut butter (we used crunchy to add a little more texture & crunch)
  • 1 1/2 cup crispy chow mein noodles
  • 1 cup mini marshmallows
  • Edible sugar eyes (2 per cookie for monsters, 1 per cookie for cyclops)

Instructions

  1. Prepare a large cookie sheet with wax paper and have sugar eyes on standby – these cookies set up and harden quickly so you’ll need to work quick to add the eyes while the coating is somewhat melty.
  2. In a large pot, melt the peanut butter and butterscotch chips on low heat.
  3. Add the mini marshmallows and chow mein noodles and stir to combine. It’s okay to have little ribbons of marshmallow that didn’t completely melt.
  4. Remove from heat and work quickly!
  5. Drop by spoonfuls on the wax paper and place sugar eyes on each cookie.
  6. Allow cookies to cool and enjoy!

  4. I couldn’t find edible eyes anywhere in my city, so I made my own out of white icing and ‘eye coloured’ M&M’s (blue, green, & brown). They turned out so cute!!!
    Also, I ran into a problem where my marshmallows wouldn’t melt!! (I bought the cheap kind). To fix this, I put the lid on the pot for a few minutes, used my electric mixer to mush them up, and added a splash of milk!
    Thanks for the great idea! I made them for my class bake sale tomorrow and they are sure to be a hit!

  5. These are delicious! My first batch fell apart and had to be eaten with a spoon. I couldn’t find crisp noodles and used regular. The second time I pulsed the noodles a few times in the food processor to break them up. That worked perfectly and they set correctly.
