My mom passed down a well-worn copy of her 1970s Betty Crocker Cook Book to me a few years ago. While the pictures are definitely retro, I have found that some of the recipes are true classics. I have stumbled across lots of recipes that I can give a little modern twist to. Like those green corn flake cookie wreaths with red hot candy holly berries? Do you remember those?! We made them every year for the holidays along with my grandma’s cut out sugar cookies and chocolate, oatmeal, peanut butter no-bake cookies. I think those are still my favorite go to recipes for holiday cookies!
But this year, in celebration of all things Fall, I opted to leave out the food coloring and swap out the red hots for some of my favorite candy ever! Yep, candy corn! Don’t you just love those white, orange and yellow striped sweet things?! If so, I know you’ll love these easy, delicious candy corn crunch no-bake cookies!!
I love no-bake cookies! No oven to heat up, no chance of burning the first batch and most of the time, they are ready to eat in just a few minutes. Now that makes my boys pretty happy! And crunchy bites of cornflakes jammed together with ooey, gooey marshmallow and sweet, creamy candy corn make ME happy!
You can adjust the amount of candy corn you mix in – I really liked ending up with one or two candy corns in each cookie. Just the right balance of crunchy cornflakes and sweet candy. I’m pretty sure these would be amazing with some dry roasted peanuts mixed in too. Darn! Why didn’t I think of that sooner?!
Come to think of it, these would be the perfect cookie to mix in your favorite candy bar, too! Chopped Pay Days would be delightful … crumbled Butterfinger bars would be amazing, for sure! What else would you add to these classic corn flake no-bake cookies?!
