chocolate peanut butter pound cake stacks & GIVEAWAY!! {closed}

Happy National Pound Cake Day!!  

Could you ever imagine a more perfect excuse to eat pound cake holiday?!  I made chocolate pound cake pecan bread pudding a few months ago and today I am celebrating (thanks to Sara Lee Desserts) with another amazingly delicious recipe and giveaway!

Chocolate and peanut butter could be the world's best combination, right? I've taken this dreamy combo one step further with three layers of double chocolate pound cake, creamy peanut butter filling and a surprise sprinkling of crunchy, salty peanuts!

Yield: about 5 stacks (depending on the size of your pound cake circles)
  • 1 box of Sara Lee double chocolate pound cake slices, thawed according to package directions
  • peanut butter cream (recipe below)
  • salted dry roasted peanuts (about 1/4 cup), coarsely chopped

  • 6 tablespoons of butter, room temperature
  • 1/2 cup creamy peanut butter
  • 1 & 1/2 cups marshmallow fluff
Cream together butter and peanut butter.  Gently fold in marshmallow fluff.  Fill piping bag fitted with a #22 tip with peanut butter cream.

Now, it's time to assemble these pretty little pillars of pound cake and peanut butter!  (Say that 5 times fast, ha ha!)



Use biscuit or cookie cutters (or any other round things you can find - even a paring knife to hand cut the circles will work) to cut three sizes of circles from your pound cake slices.  Starting with the largest layer on the bottom, pipe a layer of peanut butter cream and sprinkle with chopped dry roasted peanuts.  Add the medium sized pound cake circle, pipe and sprinkle.  Repeat with the smallest pound cake circle and top your pound cake stack with another piped dollop of peanut butter cream and peanuts.

While I know you would never toss the leftover pound cake bits, hang onto them to make mini trifles!  Pile them in individual trifle bowls and layer with the peanut butter cream and peanuts.
