For a fun Easter twist, I used popcorn - bunny tails! - for a slightly salty taste instead of the traditional Chex cereal and added a sprinkling of colorful Easter sprinkles!

bunny tails {muddy buddies popcorn}
Yield: 9 cups
9 cups popped popcorn (I used two bags of Orville Redenbacher gourmet white corn)
1 bag white chocolate chips
1 bag white chocolate chips
3/4 cup canned cream cheese frosting (you can also use vanilla or butter cream)**
1 teaspoon vanilla extract
1 1/2 cups powdered sugar
Easter/Spring sprinkles - my white/purple/pink bunnies are from Target's Dollar Spot
**The technique to use canned frosting instead of peanut butter is 100% Ashton's idea and 100% brilliant :)
In a large zip top bag, place 1 1/2 cups powdered sugar and set aside. Line a large baking sheet with waxed paper. In a microwave safe bowl, melt the white chocolate chips and frosting in the microwave, cooking in short intervals at 50-75% power. Once melted, stir in vanilla. In a large bowl, pour the melted chocolate mixture over the popcorn and stir to coat. Immediately place the popcorn in the bag with the powdered sugar, seal the bag and shake to coat the popcorn with powdered sugar. Spread the popcorn on the baking sheet and add the Easter sprinkles to garnish. Allow the chocolate to set and cool.
Then, hide it from the kids! No really, Camden took the entire batch next door and it disappeared into the waiting hands of the neighborhood kids in ten minutes flat! I guess I can give this recipe a big ol' two thumbs up from the kids!

Yep, it's messy. And yep, you'll have sticky sugary white finger tips. And yep, this is the perfect blend of crunchy salty popcorn and sweet chocolate and sprinkles! And I'm fairly certain this is Easter Bunny approved! In fact, I'm sharing a super cute way to serve this bunny tails snack tomorrow!
