Our family is a group of serious early birds!  And serious breakfast lovers!  But on school days, Kaleb and I are out the door before 7am, so I don’t have time to cook a homemade breakfast.  And with two growing boys who are attempting to eat us out of house and home, they are just not satisfied with cold cereal anymore.  So when I had the opportunity to try the new  Lil’ Griddles from Aunt Jemima, I knew that our busy mornings were going to get easier … and more delicious!

Looking for a way to make an easy breakfast that tastes like homemade, I came up with two quick breakfast ideas to use the fluffy mini pancakes Lil’ Griddles …

The mini sausage pancake stackers are made with 2 mini pancake Lil’ Griddles and a microwave breakfast sausage patty … easy breezy and the boys can make them in just a few minutes.  These sausage stackers would be SO good with the mini blueberry pancake Lil’ Griddles!

The strawberries & cream pancakes are simply mini pancake Lil’ Griddles spread with strawberry cream cheese and a strawberry slice. Easy, quick and SO delicious!  You can switch these up by replacing the mini pancakes with the cinnamon french toast sticks Lil’ Griddles!

Both of these quick breakfasts can be easily packed and eaten on the go so they are great for our early morning baseball games and Spring Break road trip!  The best part is that these pancakes, though ready in less than a minute in the microwave, they taste just like homemade pancakes made on a griddle!

And for the record?  The boys have eaten these every day since Saturday … definitely a home run around here!!
