I am sharing a cookie recipe and joining tons of other bloggers for a day of cookies and crafts as a simple way to remember the events in Newtown, CT last Friday. No, sugar and glitter won't make everything better, but this day of sweets and craftiness is just a big virtual hug to those whose hearts have been broken. Our hearts, prayers, thoughts are with you.
So today? I'm sharing a super easy recipe in honor of those lost at Sandy Hook Elementary ...
Easy Butter Pecan Sandys
#BloggersforSandyHook Yields about 24 - 28 cookies
1 butter pecan cake mix
1 stick butter, melted
2 eggs
In a large bowl, add 1/2 cup (1 stick) melted butter and 2 eggs to a butter pecan cake mix - that's it! 3 ingredients! The dough will be fairly stiff. Scoop out about 1 tablespoon of dough or roll it into a ball and place 2 inches apart on baking sheet/baking stone. Bake at 350* for 11-14 minutes ... baking time may vary, so make sure the center baked and the edges just lightly browned. Totally optional (and pretty delicious!), but you could add a simple brown sugar glaze or sandwich a scoop of butter pecan ice cream between two cookies.
These are BEYOND yummy and just a little more so because of the reason behind the baking!
