{taste this} chocolate eggnog pecan bread pudding

I think one of the best things about the holidays is leftovers!  Leftover turkey and cranberry sauce turns into open faced sandwiches, leftover ham ends up in creamy potato soup … and if you’re lucky enough to have a little leftover eggnog, then you are on your way to this decadent chocolate eggnog pecan bread pudding!!



This bread pudding is rich and chocolately thanks to the double chocolate pound cake with chocolate chunks and a warm drizzle of hot fudge.  This dish comes together quickly since I don’t have to bake a pound cake from scratch … just thaw the Sara Lee pound cake slices!  The eggnog flavor is present, but since I didn’t add any additional sugar to the bread pudding, it is not overly sweet.

Quick, make it before you start your New Years Resolution diet!!

Yield:  6-8 servings
Adapted from this recipe. 

6 Sara Lee double chocolate pound cake slices, thawed according to package directions
3/4 stick butter, melted
1 1/2 cups eggnog*
2 eggs
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/2 teaspoon salt
1/4 teaspoon nutmeg
1/3 cup chopped pecans
hot fudge sauce for garnish (optional – but do it!)

*If you can’t find eggnog or don’t like eggnog {gasp!}, you can substitute milk and adjust spices to taste.

Cut pound cake into 1 inch cubes.  Drizzle melted butter over pound cake cubes and toss gently to coat.  Place cubes in prepared baking dish or ramekins.  My dish was an oval baker with dimensions of 9.5 in x 7.5 in x 2.5 in.  Whisk the remaining ingredients together (except the hot fudge) and pour over the pound cake cubes.  Refrigerate for 30 minutes.  Bake at 350* for about 30-35 minutes.  I baked mine longer to accommodate the dish I baked it in – you just want to make sure any egg mixture is fully cooked.  If the edges of the cake begin to get too crispy, lightly cover with foil until pudding is fully baked and set.  This next step is optional, but believe me, you want to do it.  Drizzle with warm fudge hot sauce.  No really, go back and do it if you didn’t the first time.

  27. Whoa! Thankfully I haven’t made any resolutions so I won’t be breaking any by making this glorious, decadent bread pudding! It looks so moist, gooey, and chocolatey.
