No bake, hey? Ok, they do look so good – thanks for the recipe!
Super easy to make but very sweet with the sugar in the pudding. I’d reduce to one cup granulated sugar next time. Delicious!
I tried this recipe tonight. I did use just one cup of sugar. They tasted fine not overloaded with sweetness. They turned out great and my family thought they were good.
So glad you liked them – I definitely need to make another batch of these cookies soon!
Thisis.so pinned and might make it to thanksgiving… They sound so yummy! Thanks for sharing 🙂
Sounds good, I have seen many receipes for pumpkin spice pudding mix, is this made by Jello? I have not seen this in Canada, any ideas which stores sell it in the USA?
Walmart is the only place I have been able to find the pumpkin pudding, yes Jello makes it.
Cannot find “pumpkin spice” pudding anywhere, even Walmart.

Hi Keri! I just featured your delicious recipe in my Thanksgiving round up post! Thank you so much for sharing at Mom On Timeout!
Love no bake cookies and this sounds delish however I live in Minnesota and have never seen pumpkin spice pudding. Where can it be purchased from. Thanks.
I found the pumpkin spice pudding at our local Walmart and I’ve seen it at Target as well. If you can’t find it, you could try a vanilla pudding and add some pumpkin pie spice, perhaps?!
These sound absolutely wonderful! I can’t find pumpkin spice pudding mix anywhere. Crud. But I’ll keep searching. Thanks!
Just made these with my 5yr old. She had a great time, and says they rock!! thanks!
I made these cookies and they are to die for! Thank you so much! I’m so glad I found you! Happy Thanksgiving!
Use Butterscotch Pudding, add spice if needed. I have a pumpkin mousse recipe that uses it and it adds a nice richness to the background… now you can make it all year long!!
How much pumpkin spice do you add to the butterscotch pudding?
Hi Judy – this recipe actually used a box of pumpkin spice pudding mix and I only used the pumpkin pie spice to sprinkle on top. If you are going to use butterscotch, you may want to start with 1/2 teaspoon and increase the spice to taste. Hope that helps and thanks so much for stopping by!
Must have an unusual taste, but I adore vanilla… I wonder how this pumpkin stuff tastes. Never tried!
Thanks for the tips! 😉
Made pumpkin no bake cookies today very good.
Just made these! Easy peasy, and tasty to boot! Thanks for sharing!
Any chance you have a microwave friendly version? I would love to make these with my students at school (I’m an SLP in an elementary school), but we don’t have a stove!
