{taste this} carrot cake cookies with brown sugar cinnamon cream cheese glaze

Happy Thanksgiving!!  

Hopefully you are enjoying time off, time together with your family … oh, and food!  Lots of yummy food!  Which is exactly what I brought for you today!  These cookies are easy to make and you may just have everything you need to make them in your cabinet and fridge!  There can never be too many desserts on Thanksgiving!!  Enjoy!!

The Saint (you know, my hubby of 12 years and counting!) does not have a huge sweet tooth.  


And while he may not really dig chocolate (unheard of!), he does have a soft spot for carrot cake though he is not a huge fan of really tangy cream cheese icing.  Conundrum, indeed.  So what do you make this picky sweet eater for his birthday?

Did you get that?!  Phew!  But don’t let the name scare you … these cookies start with a cake mix and the glaze only has 3 ingredients.  See!  You can make these!  So let’s {taste this}!

soft carrot cake cookies

Yield:  28-30 cookies

1 carrot cake cake mix

2 eggs
1/4 cup vegetable oil

Mix together until well blended and place rounded tablespoons (or use a small Pampered Chef cookie scoop) on baking sheets or ungreased baking stones.  Bake at 350* for  about 13-17 minutes.  Baking time may vary based on the size of your cookies, oven temps and baking sheets/stones.  The centers should be cooked through and the edges just barely brown – don’t let these over bake!  While your cookies are cooling, make the glaze.

2 oz. (or about 1/4 cup) brown sugar cinnamon cream cheese, softened*

1 tablespoon milk
1/2 cup powdered sugar

Stir together.  Spread or drizzle the glaze over the cookies.  I used a Wilton squeeze bottle for my cinnamon spiral glazing :)

*I found the brown sugar cinnamon cream cheese at our local Walmart, but you could use plain cream cheese or even the white chocolate cream cheese if you can’t find the brown sugar cinnamon kind.  Or get creative and mix a little brown sugar and cinnamon into plain cream cheese.  Can’t really go wrong!

The cookies baked up soft and fluffy with the delightful spice of carrot cake.  The glaze is sticky and brown sugar cinnamon fantastic!  They were the perfect way to ring in the last year of his thirties … he even said they were the best cookies he ever had. Now THAT is music to my sugar coated ears :)
