{taste this} chocolate peanut butter graham balls

Or maybe the best no-bake bites I've made in a LONG time!  Crunchy peanut butter-y inside, dipped in chocolate and topped with mini chocolate chips and chopped dry roasted peanuts!  Believe me, you want to {taste this} ... chocolate peanut butter graham balls!




They are SO easy to make and who doesn't love chocolate and peanut butter?!  


Mix together 1 cup + 1 tablespoon peanut butter (use crunchy!) and 1 1/2 cups of graham cracker crumbs.  You can make your own graham cracker crumbs in your food processor or buy them at the grocery store (like me, ha ha!).   The mixture will still be crumbly but should hold together when compressed.  Adjust the peanut butter and/or crumbs as necessary.


Roll the mixture into 24 balls - I stuck mine in my mini muffin pan - and freeze for 30 minutes.  Melt chocolate melts or almond bark in the microwave or a double boiler.  Dip each ball in the chocolate, allow excess to drip off, move to wax paper and sprinkle with mini chocolate chips and chopped dry roasted peanuts.  Allow chocolate to set before handling.


I LOVE the crunchy inside from the graham cracker crumbs and the salty peanuts on top as a nice contrast to the sweetness.  These are pretty much ...
