Behold, our date night easy homemade BBQ chicken & caramelized onions pizza! Oh, you're definitely going to want to {taste this}!!

We started with a purchased pizza crust but of course, you could make your own. Then, I sprinkled some shredded manchego and quesadilla cheese on the crust ... that's right, NO sauce! If you can't find these cheeses, just use mozzarella or your favorite mild white cheese.
Caramelize one large sweet onion - The Saint used our mandolin to cut thin slices of sweet onion and sauteed them in a little olive oil and a smidge of butter until dark golden brown. Spread the onions over the cheese.
While the hubs was slicing onions, I shredded 1 cup of cooked rotisserie chicken from the deli and tossed it with our favorite BBQ sauce (we love Sweet Baby Ray's). Spread this on top of your pizza and add a drizzle of BBQ sauce. Bake until the crust is crispy and the cheese is melted.
The cheeses are mild, salty and hold all the toppings together. The onions and BBQ sauce provide some balanced sweetness and the chicken makes this hearty enough to be a meal. This is absolutely on our make-again list!
It was so fun to cook together and The Saint certainly comes in handy in the kitchen considering I just cannot handle raw onions ... I swear I can smell them on my hands for days, ha ha! We make a pretty good pair inside and out of the kitchen :)
There are about a bazillion recipes and cooking shows I have seen that probably inspired this pizza, but most recently, it was these BBQ chicken calzones over at Chef In Training :) Nikki is awesome ... be prepared to drool and have a big long grocery list!
