{taste this} pretty in pink lemonade cookie cups & whoopie pies

I will have you know that I tried to finish the citrus baking series.  I mean, I have made curd and cookies and cupcakes ... that should have been enough.  But the sweet little Pillsbury dough boy with his funky Hawaiian trunks just kept calling my name from the pink lemonade cake mix and frosting that I bought on a whim ... and then I decided I just had to use it!
Welcome to {taste this} ...the pretty in pink lemonade edition!! 

Not only do you get 18 pink lemonade cookie cups and 18 pink lemonade whoopie pies, but you also get 9 teeny weeny mini cookies for the cookie cups out of one boxed cake mix!  Although the cake mix and frosting were store bought, they are still so pretty and delicious!

So if you have never made cookies from a cake mix, it is quite possibly the easiest dessert ever!  Mix together one box of your favorite dry cake mix, 2 eggs and 1/2 cup (one stick) melted butter.  {You can substitute 1/3 cup vegetable oil for the butter but I prefer the butter.}

Now that you have your easy breezy batter, let's get baking!


Cookie cups:  For each cup, roll about 1 1/2 tablespoons of cookie batter into a ball and place in each compartment of a mini cupcake pan.  Bake at 350* for about 11-13 minutes.  Allow them to cool for about 60 seconds and then press the back of a spoon into the middle to create the spot for your sweet pink frosting!  Once cooled, pipe in your frosting.  I also used the last of my batter to make 9 itty bitty cookies for the top of the cookie cups.  So.darn.cute!

 
Whoopie pies:  For each cookie, roll about 1 tablespoon of cookie batter into a ball and place it on your ungreased cookie sheet (or baking stone!) about 2 inches apart.  Bake at 350* for about 11-13 minutes - you don't want these to get too brown, so keep an eye on them.  Allow to cool.  Pipe your pink lemonade frosting in between two similar sized cookies and smush ... whoopie pies!!

Baby shower?  Mother's Day tea party or brunch?  Sweet 16 party?  These little pink treats would love to come!
