These cookies are soft and fluffy, rolled in sugar and delightfully citrusy thanks to the frozen lemonade concentrate.
Ingredients
- butter
- sugar
- eggs
- all-purpose flour
- baking soda
- frozen lemonade concentrate
Step by step
- Cream butter & sugar.
- Add eggs one at a time, making sure to incorporate each egg thoroughly
- In a separate bowl, combine flour and baking soda
- Add 1/2 of dry mixture and alternate with 1/3 cup lemonade concentrate, mixing well after each addition.
- Chill the dough for at least an hour.
- Place additional sugar in a small bowl. Roll chilled cookie dough into balls, about 1 tablespoon of dough per ball. Roll the ball in the sugar and place on a baking sheet lined with parchment paper, placing cookies at least 2 inches apart.
- Bake for 8-10 minutes or until edges are just golden brown. Remove from the pan and cool on a wire rack.
Tips for Best Results
- Don’t have an hour to chill the dough? You can make these cookies without the chill time but they will be drop cookies and not quite as pretty. (But they will still taste delicious!!)
Variations
- skip rolling the cookie dough in the granulated sugar and instead dust with powdered sugar after the cookies have baked and cooled
- want even more lemon flavor? Add lemon zest or extra lemon juice to the batter
- try pink lemonade or strawberry lemonade concentrate for a fun pink-hued cookie
Sweetly sugared and lightly lemon-y, these are sure to be a hit at your Spring brunch, Easter party, or lemon-themed spread along with lemon coconut cookies, lemon bundt cake, and glazed lemon bars.
Storage
Store leftover lemon cookies in an airtight container or covered with plastic wrap at room temperature. They taste even better the day or two after you make them, so if you have the patience, they just keep getting better and better!

Ingredients
1 cup butter, softened
1 cup granulated sugar
3 eggs
3 cups all-purpose flour
1 teaspoon baking soda
2/3Â cup frozen lemonade concentrate, thawed & divided
additional granulated sugar to roll the cookies in
Instructions
- Cream butter & sugar.
- Add eggs one at a time, making sure to incorporate each egg thoroughly
- In a separate bowl, combine flour and baking soda
- Add 1/2 of dry mixture and alternate with 1/3 cup lemonade concentrate, mixing well after each addition.
- Chill dough for 1-2 hours.
- Preheat oven to 400 degrees Fahrenheit.
- Roll about a tablespoon of dough in your palms into a ball (it will be a little sticky) and then roll it in sugar.
- Place cookies on a parchment paper lined cookie sheet or baking stone two inches apart.
- Bake for 8-10 minutes.
- Remove from pan and cool on a wire rack.

Hi Sarah – I think the lemon flavor was a little stronger after a day or two once the flavors settle in a bit. If you want a bigger punch of lemon flavor, you could make a simple lemon glaze or frosting, too. Thanks so much for stopping by!
these came out so boring. 1 1/2 hours in frig & still could not roll them. No flavor & I followed the recipe exactly.
Hi Suzanne – I didn’t actually roll these out (like you would a cut out cookie with cookie cutters) but rather rolled about a tablespoon of dough in my hand. It was a little sticky and I just kept my hands a little wet to help with the sticking. I found that these cookies were better the day after they were baked – the flavors seemed to settle in a bit. And these cookies are lightly lemon – not a huge PUNCH of flavor but more of a subtle blend of classic sugar cookie and a hint of lemon. Hope this helps with the success of your cookies!
