Between laundry, crafting and watching "my" shows on the DVR, I thought I would take a break to share a quick and easy cookie that is perfect for cold days, snuggling under a blanket with a cup of something warm and a Christmas movie!! This week's {taste this tuesday} recipe is for quick gingerbread sandwich cookies!
If you have a favorite gingerbread cookie recipe, then by all means use it ... but I used store bought gingerbread cookies from the Immaculate Baking Co. and HOLY SMOKES are they delicious! (This is how the "quick" came to be in this recipe, ha ha!)
While your cookies are cooling, whip up the cinnamon sugar cream cheese filling!! Using an electric hand mixer, in a large mixing bowl combine the following and mix well:
- 1 package softened cream cheese (regular or reduced fat) - 8 oz.
- 1/2 cup powdered sugar
- 1 teaspoon ground cinnamon
- dash of nutmeg
- about 1/8 cup milk
This spicy cookie with the sweet and slightly tangy filling is perfect for your cookie exchange, holiday party, neighborhood gift giving ... and I'm pretty sure Santa wouldn't mind finding these on Christmas Eve either!
